Food for Thought - Food for Body: Each ingredient is important to this recipe. From the smallest amount to the greatest; if we missed any ingredient it would not taste right or may not even be corn fritters at all. Each and every thing has a purpose and a need.

One of the example we used was - What if the oil said to the flour, “I am more important and we don’t need you as much!” Without the oil, at best we would have corn pancakes; and without the flour, there would just be a lot of liquid. The baking powder and salt have tiny quantities but are really important. Without them the fritters would not cook up fluffy and flavorful.

No one ingredient is more important than the other; nor, is one ingredient less important than the other. We need every piece to make a brand new thing…Corn Fritters. Yummy.

Recipe: Original corn fritter recipe taken from AllRecipes and updated a bit for my personal preferences.
1 large bottle of oil
1 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup white sugar
1 egg, lightly beaten
½ cup milk
½ (12 oz) can creamed corn
½ (12 oz) can whole kernel corn, drained

Cooking Directions:
1. Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
2. In a medium bowl, combine flour, baking powder, salt and sugar.
3. Beat together egg, milk, creamed corn;
4. Stir wet mixture into flour mixture. Mix in the corn kernels only until mixed. Do not overbeat.
5. Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

One recipe fed 4 hungry children and 1 adult. We set up groups of 3 and let each group prepare their own mixture and then (because we are one) combined them all before it was sent off to the kitchen. Many thanks to Mary Schwartz and Ann Wright for cooking them to golden, crispy perfection. We enjoyed our fritters with syrup and sausage. Milk was the beverage of choice and our fruit was tangerines.
